- 2 cups mashed sweet potatoes
- 6 tablespoons sugar
- ½ tablespoon cinnamon
- 2 tablespoons margarine
- 1 cup heavy cream
- 2 eggs
- 2 teaspoons vanilla
- Marshmallows to cover top of casserole dish
- Boil sweet potatoes with skins on until
- Peel and mash.
- Add sugar, cinnamon, margarine, and cream.
- Beat eggs well and add to mixture.
- Add vanilla.
- Pour into buttered, 2-quart casserole dish
and top with marshmallows.
- Bake in a preheated 325° oven for 30
